Having an all-too-passionate interest in experimenting with food, I simply had to give this stuff a try after discovering it by smell during a local tradefair.
I decided to see how it would affect some 'standard' dishes I cook, so I whipped up a batch of my now-favourite beef stir-fry using this. It was a winner by far! A nice range of flavours running through the sauce and into the rice. Brilliant.
Another way I tried it was to pop a hefty dash of it, freshly ground, into a saucepan with some good NZ butter, put it on a gentle heat and let it infuse for 4 or 5 minutes, then use this in a potato mash. Adds a really rich, unusual flavour to the mash that I found quite appealing. Adding in a teaspoon of mild English mustard as well just capped the flavour nicely, complimenting the chilli.
The roasted garlic bulb that came in this pack ended it's life in the service of my stomach, spread through about 4 medium loaves of garlic bread over the next 2 weeks. A sad shame to lose him, but he died well.
Overall, an excellent pack to buy, available at trade shows and via the Smoke and Spice website.
