I love my slow cooker. It has been my saviour many times through out past off seasons when money is tight and you need a little food to go a long way, or need to hide the least loved vegetables from the kids lol I would often see slow cooker meal bases at the supermarket but had never bought any before though, just always throwing whatever was in the cupboard, fridge, freezer together into the slow cooker and hoping for the best....the best did not always happen :-/
This off season I decided I would purchase a few of the slow cooker packets and have them ready to go when needed. Was a good decision, especially with a toddler grandchild here most days and her father having soccer and work exp after school 3 or more days a week. It meant I did not have to just throw everything into the slow cooker and cross my fingers and hope we got something edible. I just had to follow the basic instructions, and I knew we were going to get something edible! Not just edible, but flavorsome, and full of goodness, with no hidden veges!
Most of what you will need to add to make this meal you will no doubt already have on hand. I did need to purchase the coconut milk though, but otherwise its really just chicken, potatoes, and onions. If you don't have these basic ingredients though you could improvise and use whatever is available. Then you pretty much just pop it all in the slow cooker, add the recipe base to the coconut milk, pour over top and you're good to go. The time to cook is also not as long as some slow cooker recipes, only requiring 2 hours on high or 4 hours on slow.
I admit I thought it would be like most things and take all day to cook, so I had it prepped and ready to go well before it was needed. So be sure to read the packet in full too. Not only does it smell delicious, and is easy to make, but it looks amazing too. It is not to strong or spicy and the whole family (adults and children) really enjoyed it. A super filling and tasty meal for not a great deal of money too. Will definitely be purchasing again. It is just to easy!
