Miss 2 seems to have a real interest in baking at the moment which I try and encourage as I think it's a great skill to encourage, especially with so many people these days seeming to not know how to bake and cook which I think is a real shame! I always try and keep a packet or 2 of baking mixes stocked up in the pantry for these days when she asks to bake out of the blue, so when I see mixes on sale at the supermarket I tend to grab a couple.
One of the packets that I had brought recently was the Edmonds Triple Chocolate Muffin Mix, so upon showing Miss 2 her choices a few weeks ago she of course went for the chocolate mix over the blueberry and the raspberry swirl cake! From my first glance of the packet I thought these looked delicious and full of chocolate, both dark, and white varieties and they looked to have a deep, dark chocolate look to them so I was very keen to see how the end product rated in comparison to the picture on the box.
I tipped the dry mix into the bowl and then let Miss 2 help me by adding in the eggs, water and oil and then handed her the wooden spoon to mix it together ( I made sure not to let her mix the mixture for to long as I know that this is the secret to making perfect muffins). This process only took about 10 minutes with Miss 2 in tow, so if I was to bake these on my own they would certainly be very quick to throw together within a couple of minutes which is good to know! We used a cupcake scoop to place them into our pretty pink muffin cases so that they were even in size and then into the oven they went for around 12 minutes.
The aroma that filled the house as these cooked was divine and I could see them rising beautifully through the glass in the oven. The taste I wasn't to keen on, it definitely didn't have that home baking appeal to them, the muffin was rather doughy and really not that chocolate flavour which I would have hoped for although there did seem to be a good amount of chocolate chips throughout luckily which made them edible.
Id definitely buy the Betty Crocker muffin mixes over these Triple Choc Muffins, which I would not buy again, unless perhaps they were to change there recipe.
Although I do prefer to bake from scratch, I admit I am also a sucker for pre packaged baking mixes. Most of the time I am sucked it by how amazing the baking looks on the box, but I also like the convenience of them, especially when it comes to baking for school lunches. However as much as I like the convenience I do not like the price tag that is associated with these 'lazy' baking mixes. Some of them are priced at nearly ten dollars a box which is absolutely absurd.
Edmonds offer a number of different pre packaged mixes and the triple choc muffins are possibly one of my kids favourites. As an added bonus they are so simple to make that even my 7 year old daughter is easily able to make them. The instructions are simple to follow, and most only require an egg, milk or oil and sometimes a little butter. Everything else you need is already in the box. The instructions are printed on the back of the box, so be sure not to throw the box away before you have started, or you will need to fish it back out of the bin lol
The flavours are very nice, and this one has a decent amount of chocolate drops in the mix. I do find that I need to make slightly smaller muffins than the photo on the box depicts if I want to get the amount of muffins the box suggests you get per pack, but this is ok though. They also freeze well, which again makes them convenient for school lunches.. But no matter how amazing they are nothing compares to good ole fashion home baking made from scratch like nana used to make ;)
I love to use these type of box mixes when I bake. I have learnt to enjoy baking from scratch recently. But when you are baking with children, you really can not go passed a box mix. The box has all the dry ingredients, nicely packaged with clear instructions to follow.
I got in the kitchen with my kid in tow. I opened the dry ingredient package and let her pour it into the bowl. I then gave her cups of the wet ingredients to add. She was able to help. We still did a little "maths" working, but there wasn't the massive mess of trying to measure out flour, etc.
This was easy enough to mix up in the bowl and we could take turns. As she is now older, she mixed for longer too which was nice. Using paper cups in my muffin tray, we spooned the mixture in and then put it in the oven to bake. The smell of the chocolate baking was excellent.
These didn't stay muffins for long, because my daughter's favourite part of "cake baking" is decorating. So we added some icing base and then used our writing icing on them to make them pretty. This was a great activity for the afternoon and made for an excellent dessert later on too.
I don't often use these type of kits when I do baking, because it is usually more expensive seen as I already have the baking basics like flour, butter, eggs, sugar etc all at home. I gave these a go recently for my kids birthday party just because I had to make a few muffins and I also had 2 birthday cakes to make so wanted to save time.
The kit was very easy to use and the directions were really easy to follow. There were no special techniques it was basically throw everything into a bowl and mix together and then cook, which was just wait I needed as it was a very busy day making cakes and doing other before party preparations. The one thing I didn't like was that you used oil, whereas if I was make muffins myself I would use buttter and I didn't so much like the idea of using oil.
The muffins cooked really well they rose beautifully and had just the right amount of spring back when you pressed the top. I didn't really like the taste much though I thought they were quite dry like an over mixed muffin would be, but I don't know if that was the way I mixed it or if it was the muffin mix itself. We iced ours with chocolate to so they were very very indulgent!!
I always keep a box of muffin mix in the cupboard for those moments when you need to whip something up in a hurry. The directions are easy to follow, you don't need to add much to the mix except for things normally already in your cupboard (oil, egg and milk) and they always come out of the oven perfect.
However, I found myself without a box on Sunday night so sent the husband up to the local Countdown to buy his favourite flavour. I mixed the entire mix up by hand since it is so easy, and popped the mix into the patty cups provided. But go to add the extra chocolate chips on top and they were all sun damaged! Beyond use-able so they had to be eliminated this time.
I got a response from Edmonds within 24 hours however which I thought was excellent customer service. This saved it for me and would buy this flavour again, as with other flavours that I have not had a problem with before.
